This one is perfect for a holiday table or any night of the week and it takes just minutes to put together.
Arugula Salad with Apples, Pecans, Cranberries and Goat Cheese
Ingredients
- 4-5 oz Arugula
- 2-4 oz Another lettuce (breen, monte carlo, leafy green, etc) optional
- 1 Fuji Apple
- 1/2 cup pecans we use them raw but you can roast them or even candy them.
- 1/2 cup dried cranberries
- 1-2 oz goat cheese

Instructions
- Add Arugula and other lettuce to a bowl and toss together. You don't even have to cut the arugula.
- Cut the apple. We like to cut it into strips just to offer a different size, but it can be chopped, diced, sliced, etc.
- Add the apples, pecans, cranberries and goat cheese to the salad.
- Add the dressing right before serving.
