Arugula Salad with Apples, Pecans, Cranberries and Goat Cheese

Ingredients

  • 4-5 oz Arugula
  • 2-4 oz Another lettuce (breen, monte carlo, leafy green, etc) optional
  • 1 Fuji Apple
  • 1/2 cup pecans we use them raw but you can roast them or even candy them.
  • 1/2 cup dried cranberries
  • 1-2 oz goat cheese
  • 1/4 cup homemade dressing https://feedingthebyrds.com/copycat-italian-dressing

Instructions

  • Add Arugula and other lettuce to a bowl and toss together. You don't even have to cut the arugula.
  • Cut the apple. We like to cut it into strips just to offer a different size, but it can be chopped, diced, sliced, etc.
  • Add the apples, pecans, cranberries and goat cheese to the salad.
  • Add the dressing right before serving.
