Chocolate Peanut Butter Energy Bites
Ingredients
- 2 cups Rolled Oats
- 10-15 pitted Medjool dates
- 5-6 dried figs
- ½ cup cocoa powder
- ¾ cup smooth peanut butter
- 2 tbsp maple syrup
- 2 tsp vanilla extract
- 1 tsp water wait on this until the end
Instructions
- Start by adding the oats to the food processor for about a minute. I like to make them a little more into a powder before adding all of the other ingredients.
- Add in all other ingredients except water and combine.
- Only add water if the ingredients aren't pulling together. 1 tsp at a time.
- Use your 1.5 tbsp scoop and press the ingredients into a ball shape. You really can't roll these, its more of a press and shape motion.
- Store in the fridge for 4-5 days or in the freezer and thaw when ready to eat.
