Chocolate Peanut Butter Energy Bites

Ingredients

  • 2 cups Rolled Oats
  • 10-15 pitted Medjool dates
  • 5-6 dried figs
  • ½ cup cocoa powder
  • ¾ cup smooth peanut butter
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract
  • 1 tsp water wait on this until the end

Instructions

  • Start by adding the oats to the food processor for about a minute. I like to make them a little more into a powder before adding all of the other ingredients.
  • Add in all other ingredients except water and combine.
  • Only add water if the ingredients aren't pulling together. 1 tsp at a time.
  • Use your 1.5 tbsp scoop and press the ingredients into a ball shape. You really can't roll these, its more of a press and shape motion.
  • Store in the fridge for 4-5 days or in the freezer and thaw when ready to eat.
