Creamy Pork and Potato Stew

Ingredients
- 3 Potatoes Diced
- 1 lb Pork Shoulder
- 2 ears Cob Corn
- 2 Tbsp Butter
- 3 cups Chicken Stock We use bone broth
- ½ cup heavy cream
- 1 tsp Garlic Powder
- Salt to taste
Instructions
- Cut the pork shoulder into small pieces.
- Dice the potatoes into cubes and slice the corn off the cob.
- In a large pot, melt the butter over medium heat.
- Add pork and brown on all sides (about 10 minutes)
- Stir in the potatoes, salt and chicken stock and bring to a boil.
- Turn down the heat to medium low, cover and cook for 20 minutes for the potatoes to soften.
- Stir in the corn and garlic powder and cook for 5 minutes.
- Add in a ½ cup of heavy cream, stir and salt to taste.
