Creamy Pork and Potato Stew

Servings: 4

Ingredients

  • 3 Potatoes Diced
  • 1 lb Pork Shoulder
  • 2 ears Cob Corn
  • 2 Tbsp Butter
  • 3 cups Chicken Stock We use bone broth
  • ½ cup heavy cream
  • 1 tsp Garlic Powder
  • Salt to taste

Instructions

  • Cut the pork shoulder into small pieces.
  • Dice the potatoes into cubes and slice the corn off the cob.
  • In a large pot, melt the butter over medium heat.
  • Add pork and brown on all sides (about 10 minutes)
  • Stir in the potatoes, salt and chicken stock and bring to a boil.
  • Turn down the heat to medium low, cover and cook for 20 minutes for the potatoes to soften.
  • Stir in the corn and garlic powder and cook for 5 minutes.
  • Add in a ½ cup of heavy cream, stir and salt to taste.
