One of my top favorite things is a charcuterie board. I love how you can make them incredibly simple or exquisitely complex. This one is absolutely perfect during the warm summer months.
Summer Meat and Cheese Board
Ingredients
Marinated Goat Cheese (All of these ingredients are optional. You should add in whatever ingredients you love)
- ⅓ cup olive or avocado oil
- 3 tbsp your favorite herbs We love rosemary, thyme and oregano but you should use any herb you love
- ½ tsp salt
- 2 tbsp sun-dried tomatoes cut into small pieces
- 2 tbsp kalamata olives cut into small pieces
- 4 oz Goat cheese
Burrata Cheese
- 1 burrata
- 1 tbsp avocado oil or olive oil
- ½ tsp salt and pepper
- 1 handful cherry tomatoes We love the colorful ones.
- ½ tsp oregano
Honey Feta
- 4 oz feta chunk
- 2 tbsp honey
- pepper, pistachios, pine nuts all optional but fun!
Other Possible Ingredients
- crackers, crusty bread, fruit, meats (salami, pepperoni, prosciutto) dates, figs, etc.
Instructions
Marinated Goat Cheese
- Combine the oil, herbs, tomatoes and olives in a bowl.
- You can leave the goat cheese whole or roll into small balls and place them in the oil.
- Marinate for at least an hour before serving with fruit, crackers, and/or crusty bread.
Burrata Cheese
- Put the burrata on a plate or in a shallow dish.
- Cut the cherry tomatoes in half and place in the bowl as well.
- Drizzle with oil, salt, pepper and oregano.
Honey Feta
- Place the feta in a bowl or on a dish.
- Drizzle with honey and top with your favorite toppings, or leave it with just honey.
Constructing
- Place the cheeses down and then all of your fruits, breads and meats all around.
