This Zucchini Bread is something we make almost weekly in our house. I’ve even been known to make multiple batches at a time and then freeze them for later. We love adding protein so that I know my kids and family are getting a full range of good macronutrients.

Chocolate Zucchini Bread
Ingredients
- 4 cups zucchini shredded
- 3 eggs
- ¾ cup sugar
- ½ cup brown sugar
- 3 cups flour
- 1.5 tsp cinnamon
- 2-4 scoops KOS Chocolate Protein Powder
- ½ cup coconut oil melted
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp salt
- chocolate chips optional
Instructions
- Preheat the oven to 375°
- Add all of the ingredients to a mixing bowl and mix together.
- Spray a bundt pan or two loaf pans liberally. (we use a bundt pan)
- Add all of the batter to pan.
- Bake in the oven for about 45 minutes until a toothpick comes out clean.
- We like to cut ours in half and freeze half and leave the other half out for eating for up to 3 days.
