Chocolate Zucchini Bread

Ingredients

  • 4 cups zucchini shredded
  • 3 eggs
  • ¾ cup sugar
  • ½ cup brown sugar
  • 3 cups flour
  • 1.5 tsp cinnamon
  • 2-4 scoops KOS Chocolate Protein Powder
  • ½ cup coconut oil melted
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • chocolate chips optional

Instructions

  • Preheat the oven to 375°
  • Add all of the ingredients to a mixing bowl and mix together.
  • Spray a bundt pan or two loaf pans liberally. (we use a bundt pan)
  • Add all of the batter to pan.
  • Bake in the oven for about 45 minutes until a toothpick comes out clean.
  • We like to cut ours in half and freeze half and leave the other half out for eating for up to 3 days.
