Slow Cooker Rotel Pasta

This recipe is really easy but it does take a little bit of babysitting. You want to be sure the noodles don’t overcook and get too gummy in texture. We found that right around 2 hours on low was the perfect amount of time for us but you’ll want to watch yours!

Rotel Pasta in the Slow Cooker

Ingredients

  • 1 can Rotel Tomatoes or store brand equivalent do not drain
  • 1 cup milk
  • 1 ½ cups broth we use bone broth
  • 2 minced garlic cloves
  • ½ diced bell pepper
  • 1 lb pasta we used small shells
  • 1 lb sauteed ground beef
  • ¼ lb american cheese
  • 2-4 oz cheddar cheese

Instructions

  • Cook ground beef with some salt and pepper to taste.
  • Add tomatoes, milk, broth, garlic, peppers, ground beef and pasta to the crock pot.
  • Cook on low for 2 hours.
  • Stir in the cheese and let it melt. Serve hot!
  • Top with chopped green onion for color.
