This is one of those meals that we return to time and time again. So delicious and easy with minimal ingredients!
Sausage and Potato Hash
Servings: 4
Ingredients
- 1 lb sausage or chicken sausage links
- 4-5 red potatoes
- 1 lb fresh green beans
- 1 tbsp oil
- 1 tsp salt
Instructions
- Wash and cube potatoes. Cut green beans into bite sized pieces.
- Add potatoes and green beans to a large pot. Add enough water to cover plus 1 tsp of salt and bring to a boil. Cook for 10 minutes.
- Drain potatoes and green beans.
- Add the oil to a skillet and cook the sausage through.
- Remove the sausage from the skillet and add in the potatoes and green beans, adding more oil if needed. Let them sautee and get a little bit of color, turning ocassionally to get color on all sides.
- Put the sausage back in to reheat.
- serve!
