Sausage and Potato Hash

Ingredients

  • 1 lb sausage or chicken sausage links
  • 4-5 red potatoes
  • 1 lb fresh green beans
  • 1 tbsp oil
  • 1 tsp salt

Instructions

  • Wash and cube potatoes. Cut green beans into bite sized pieces.
  • Add potatoes and green beans to a large pot. Add enough water to cover plus 1 tsp of salt and bring to a boil. Cook for 10 minutes.
  • Drain potatoes and green beans.
  • Add the oil to a skillet and cook the sausage through.
  • Remove the sausage from the skillet and add in the potatoes and green beans, adding more oil if needed. Let them sautee and get a little bit of color, turning ocassionally to get color on all sides.
  • Put the sausage back in to reheat.
  • serve!
