This is a really easy side dish, made in the crock pot, and it has all of the things you need in it. No need to worry about making multiple sides. Super tasty and easy to put together.
Pesto Beans and Rice (Crock Pot Method)
Ingredients
- ¾ cup Wild Grain Rice
- 14 oz bone broth or chicken broth
- 1 can Great Northern Beans Drained and Rinsed
- ½ tsp salt
- ½ bag Frozen and cut green beans
- ½ cup pesto
- ½ tsp onion powder optional
- ½ tsp garlic powder optional
Instructions
- Dump the white beans, broth and rice into the crock pot. Add the salt and if you want, the onion powder and garlic powder.
- Cook on high for 2 hours.
- Chop the frozen green beans into bite sized pieces if they aren't already cut and add to the crock pot.
- Add in the pesto.
- Cook for another hour or until the rice is done.
Notes
Depending on the kind of rice you use, this may take more or less time. I do not suggest regular white rice, as it gets too mushy too quickly. A wild grain holds up a lot better.
