Pesto Beans and Rice (Crock Pot Method)

Ingredients

  • ¾ cup Wild Grain Rice
  • 14 oz bone broth or chicken broth
  • 1 can Great Northern Beans Drained and Rinsed
  • ½ tsp salt
  • ½ bag Frozen and cut green beans
  • ½ cup pesto
  • ½ tsp onion powder optional
  • ½ tsp garlic powder optional

Instructions

  • Dump the white beans, broth and rice into the crock pot. Add the salt and if you want, the onion powder and garlic powder.
  • Cook on high for 2 hours.
  • Chop the frozen green beans into bite sized pieces if they aren't already cut and add to the crock pot.
  • Add in the pesto.
  • Cook for another hour or until the rice is done.

Notes

Depending on the kind of rice you use, this may take more or less time. I do not suggest regular white rice, as it gets too mushy too quickly. A wild grain holds up a lot better.
