We love to change up a traditional meatloaf just a bit. These mini meatloaves use your muffin pan and are so tasty and fun! They are also perfect if you want to make and freeze them for later.
Mini Meatloaves
Servings: 9 mini loaves
Ingredients
Meatloaf
- 1 lb ground meat of choice
- 1 ¼ cup crushed stuffing mix (pepperidge farm) Sometimes we used oats here instead
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp basil
- 1 tsp Worcestershire
Sauce
- ½ cup ketchup
- 2 tbsp bbq sauce
- 1½ tbsp brown sugar
- 1 tsp Worcestershire
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp Italian seasoning
Instructions
- Preheat oven to 350°
- Mix together the meatloaf ingredients in a bowl.
- Spray your muffin pan with nonstick spray and fill each muffin form to the top with the meatloaf mixture.
- Bake for 20 minutes,
- While the loaves are baking, make up the sauce. Mix together all of the sauce ingredients.
- Top each loaf with about 1 tbsp of sauce and bake for an additional 10 minutes.
- Top with parsley for color.
