Mini Meatloaves

Servings: 9 mini loaves

Ingredients

Meatloaf

  • 1 lb ground meat of choice
  • 1 ¼ cup crushed stuffing mix (pepperidge farm) Sometimes we used oats here instead
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp basil
  • 1 tsp Worcestershire

Sauce

  • ½ cup ketchup
  • 2 tbsp bbq sauce
  • tbsp brown sugar
  • 1 tsp Worcestershire
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning

Instructions

  • Preheat oven to 350°
  • Mix together the meatloaf ingredients in a bowl.
  • Spray your muffin pan with nonstick spray and fill each muffin form to the top with the meatloaf mixture.
  • Bake for 20 minutes,
  • While the loaves are baking, make up the sauce. Mix together all of the sauce ingredients.
  • Top each loaf with about 1 tbsp of sauce and bake for an additional 10 minutes.
  • Top with parsley for color.
