When I think of spring and summer recipes, I think of lettuce wraps. Light and refreshing but also filling. We love how easy these are to put together and how beautiful they look when displayed.
Lettuce Wraps
Servings: 6 people
Ingredients
- 2 cups cooked rice
- ½ green bell pepper chopped
- ½ red or orange bell pepper chopped
- 1 carrot shredded
- 1 lb ground beef
- 1 head butterhead lettuce
- 1 tsp salt
- 1 tsp minced garlic
- 1 tsp ginger paste
- 1 green onion chopped
Sauce
- ¼ cup maple syrup
- ¼ cup soy sauce or coconut aminos
- 2 tbsp sweet Thai chili sauce
- ¼ tsp red pepper flakes optional – for heat
- 2 tsp rice vinegar
- 1 tsp oil
- 2 tsp cornstarch or tapioca flour
Instructions
- Wash and prep the lettuce. Dry them and set them out to be stuffed.
- Mix all of the sauce ingredients in a bowl.
- Sautee the ground beef until almost cooked through.
- Add in the garlic and ginger on medium heat. Let it cook for 1 minute.
- Add in the chopped and shredded vegetables and sautee for 4-5 minutes until they start to soften just a little bit.
- Add in the chopped green onion and the sauce and cook for 3-4 minutes.
- Add about a heaping spoonful of rice and the meat mixture to each lettuce leaf
- Serve hot.
