Lettuce Wraps

Servings: 6 people

Ingredients

  • 2 cups cooked rice
  • ½ green bell pepper chopped
  • ½ red or orange bell pepper chopped
  • 1 carrot shredded
  • 1 lb ground beef
  • 1 head butterhead lettuce
  • 1 tsp salt
  • 1 tsp minced garlic
  • 1 tsp ginger paste
  • 1 green onion chopped

Sauce

  • ¼ cup maple syrup
  • ¼ cup soy sauce or coconut aminos
  • 2 tbsp sweet Thai chili sauce
  • ¼ tsp red pepper flakes optional - for heat
  • 2 tsp rice vinegar
  • 1 tsp oil
  • 2 tsp cornstarch or tapioca flour

Instructions

  • Wash and prep the lettuce. Dry them and set them out to be stuffed.
  • Mix all of the sauce ingredients in a bowl.
  • Sautee the ground beef until almost cooked through.
  • Add in the garlic and ginger on medium heat. Let it cook for 1 minute.
  • Add in the chopped and shredded vegetables and sautee for 4-5 minutes until they start to soften just a little bit.
  • Add in the chopped green onion and the sauce and cook for 3-4 minutes.
  • Add about a heaping spoonful of rice and the meat mixture to each lettuce leaf
  • Serve hot.
