Wash and prep the lettuce. Dry them and set them out to be stuffed.
Mix all of the sauce ingredients in a bowl.
Sautee the ground beef until almost cooked through.
Add in the garlic and ginger on medium heat. Let it cook for 1 minute.
Add in the chopped and shredded vegetables and sautee for 4-5 minutes until they start to soften just a little bit.
Add in the chopped green onion and the sauce and cook for 3-4 minutes.
Add about a heaping spoonful of rice and the meat mixture to each lettuce leaf
Serve hot.
