Cajun Chicken Pasta

You won’t regret adding this one pot, chicken dish, to your menu this week. Don’t be scared of the word “cajun” either. You can make this as spicy as you want or leave it out completely.

Cajun Chicken Pasta

Servings: 4 people

Ingredients

  • 1 lb chicken thighs or breasts cubed
  • 2 tsp paprika
  • 1 tsp oregano
  • 1 tsp thyme
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp cayene powder
  • 1 tbsp oil avocado or olive
  • 1 tbsp butter
  • 1 tsp minced garlic
  • 1 can fire-roasted diced tomatoes do not drain
  • 2 cups bone broth or chicken broth
  • ½ lb pasta of choice
  • 2 oz cream cheese

Instructions

  • Combine all of the spices in a bowl
  • Cut the chicken into bite sized pieces and toss in the spice blend.
  • Heat your oil and butter in a large pot or dutch oven over medium-high heat. You want the butter to get foamy.
  • Add in the chicken and sear (it doesn't have to cook all the way through)
  • Add in minced garlic and cook on medium heat for just a minute or two.
  • Add in your can of tomatoes and stir everything together, scraping the bottom of the pot to pull up any bits.
  • Add in chicken broth, put a lid on and just bring up to a boil.
  • Add in the pasta and stir. Then turn down the heat to a medium low.
  • Cook the pasta for about 10 minutes or until pasta is al dente.
  • Stir in cream cheese and let it melt.
  • Serve!
