This Burrata Beet Salad is a simple yet stunning dish that brings together creamy burrata, sweet roasted beets, and peppery arugula tossed in a quick homemade Italian dressing. It’s fresh, flavorful, and effortlessly elegant—perfect as a light lunch, dinner side, or appetizer for your next gathering.

Burrata and Beet Salad over dressed Arugula

Ingredients

  • 1 lb beets Make these ahead of time so they can cool
  • handful of arugula
  • burrata
  • 1/2 tsp italian seasoning

Dressing

  • cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp mustard
  • ½ tsp garlic powder
  • ½ tsp dried oregano
  • Pinch of salt

Instructions

  • Preheat oven to 400℉.
  • Wash beets, wrap in foil, and bake for 1 hour. Let cool, then peel and dice.
  • Whisk together the dressing ingredients.
  • Take a handful of arugula and pour about 2 tbsp of dressing over and toss.

Assemble

  • Place dressed arugula on a plate and add diced roasted beets.
  • Place burrata in the center.
  • Sprinkle with salt + Italian seasoning.
  • Indulge!
