Burrata and Beet Salad over dressed Arugula
Ingredients
- 1 lb beets Make these ahead of time so they can cool
- handful of arugula
- burrata
- 1/2 tsp italian seasoning
Dressing
- ⅓ cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp mustard
- ½ tsp garlic powder
- ½ tsp dried oregano
- Pinch of salt
Instructions
- Preheat oven to 400℉.
- Wash beets, wrap in foil, and bake for 1 hour. Let cool, then peel and dice.
- Whisk together the dressing ingredients.
- Take a handful of arugula and pour about 2 tbsp of dressing over and toss.
Assemble
- Place dressed arugula on a plate and add diced roasted beets.
- Place burrata in the center.
- Sprinkle with salt + Italian seasoning.
