Burrata and Beet Salad over dressed Arugula
Ingredients

lb
beets
Make these ahead of time so they can cool
handful of arugula
burrata
1/2
tsp
italian seasoning
Dressing
⅓
cup
olive oil
2
tbsp
red wine vinegar
1
tsp
mustard
½
tsp
garlic powder
½
tsp
dried oregano
Pinch
of salt
Instructions
Preheat oven to 400℉.
Wash beets, wrap in foil, and bake for 1 hour. Let cool, then peel and dice.
Whisk together the dressing ingredients.
Take a handful of arugula and pour about 2 tbsp of dressing over and toss.
Assemble
Place dressed arugula on a plate and add diced roasted beets.
Place burrata in the center.
Sprinkle with salt + Italian seasoning.
Indulge!
