We have eaten this so many times! It makes a great lunch or dinner and it reheats so well. In under 20 min you can have a really awesome meal that is packed full of flavor.
Egg Roll in a Bowl
Ingredients
- 2 tsp oil We use Avocado Oil
- 1 lb Ground pork, chicken or turkey
- 1 bag coleslaw (regular or broccoli slaw)
- 1 shredded carrot optional
- 1 tsp salt omit if using coconut aminos
- 1 tsp cumin optional
- 1 tsp ginger paste or freshly grated ginger optional
- 4 tbsp Coconut Aminos or Soy Sauce
Instructions
- Shred the carrot (This is an option ingredient but I like how it bulks up the recipe and adds a little more color)
- Sautee the ground meat in 1 tsp of oil. I like to add in spices at this point – cumin, ginger, garlic, whatever spices you love.
- Add in the bag of coleslaw and the carrots.
- Sautee for a min and add a little more oil if needed.
- Add the coconut aminos and let the recipe cook for 5-7 minutes until the coleslaw softens up a bit.
- Add salt if needed
- Serve with fresh parsley if desired.
