Cheesy Sausage Boats
Ingredients
- 1 lb Italian Sausage Links
- 2 mozarella sticks cut in half (or use another kind of cheese)
- 1 jar pasta sauce Or homemade pasta sauce
- 1 green pepper
- 1 red pepper
- 1 tsp salt
- ½ tsp pepper
- ¼ cup shredded parmesan
Instructions
- Preheat oven to 400°.
- Pour half of the pasta sauce at the bottom of a 9×13 pan.
- Slice the peppers into strips and spread into the pan.
- Prep the “boats”: Slice sausages lengthwise without cutting all the way through. Open them slightly like a boat and place in the baking dish.
- Fill each sausage “boat” with the cheese a piece of cheese.
- Pour the rest of the pasta sauce all over the top.
- Optional: Add shredded cheese to the top.
- Cover with foil and bake for 20 min. Remove the foil and bake for an additional 10 min or until sausage is cooked through.
- Serve by itself, over pasta or over rice.
