Cheesy Sausage Boats

Ingredients

  • 1 lb Italian Sausage Links
  • 2 mozarella sticks cut in half (or use another kind of cheese)
  • 1 jar pasta sauce Or homemade pasta sauce
  • 1 green pepper
  • 1 red pepper
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup shredded parmesan

Instructions

  • Preheat oven to 400°.
  • Pour half of the pasta sauce at the bottom of a 9x13 pan.
  • Slice the peppers into strips and spread into the pan.
  • Prep the “boats”: Slice sausages lengthwise without cutting all the way through. Open them slightly like a boat and place in the baking dish.
  • Fill each sausage “boat” with the cheese a piece of cheese.
  • Pour the rest of the pasta sauce all over the top.
  • Optional: Add shredded cheese to the top.
  • Cover with foil and bake for 20 min. Remove the foil and bake for an additional 10 min or until sausage is cooked through.
  • Serve by itself, over pasta or over rice.
