Preheat oven to 400°.
Pour half of the pasta sauce at the bottom of a 9x13 pan.
Slice the peppers into strips and spread into the pan.
Prep the “boats”: Slice sausages lengthwise without cutting all the way through. Open them slightly like a boat and place in the baking dish.
Fill each sausage “boat” with the cheese a piece of cheese.
Pour the rest of the pasta sauce all over the top.
Optional: Add shredded cheese to the top.
Cover with foil and bake for 20 min. Remove the foil and bake for an additional 10 min or until sausage is cooked through.
Serve by itself, over pasta or over rice.
