Banana Walnut French Toast Casserole (In the Crock Pot)
Ingredients
- 2 bananas sliced
- ½ tsp lemon juice
- 1 french baguette
- 4 eggs
- 1 tbsp sugar
- 1 tsp cinnamon
- ¾ cup milk
- ½ tsp almond or vanilla extract
- 1 tbsp coconut oil melted
- ½ cup chopped walnuts
- ½ cup maple syrup heated
Instructions
- Toss the sliced bananas and the lemon juice in a small bowl.
- Cut up the baguette into bite sized pieces and place half of them into the crock pot insert.
- Add half of the bananas onto that layer.
- Add the rest of the cut bread and then add another layer of bananas.
- Mix together the egg, sugar, cinnamon, milk and extract. Pour over all of the layers in the crock pot.
- Drizzle with coconut oil and top with walnuts.
- Cook on high for 3 hours.
- Serve with warm maple syrup.
