Banana Walnut French Toast Casserole (In the Crock Pot)

Ingredients

  • 2 bananas sliced
  • ½ tsp lemon juice
  • 1 french baguette
  • 4 eggs
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • ¾ cup milk
  • ½ tsp almond or vanilla extract
  • 1 tbsp coconut oil melted
  • ½ cup chopped walnuts
  • ½ cup maple syrup heated

Instructions

  • Toss the sliced bananas and the lemon juice in a small bowl.
  • Cut up the baguette into bite sized pieces and place half of them into the crock pot insert.
  • Add half of the bananas onto that layer.
  • Add the rest of the cut bread and then add another layer of bananas.
  • Mix together the egg, sugar, cinnamon, milk and extract. Pour over all of the layers in the crock pot.
  • Drizzle with coconut oil and top with walnuts.
  • Cook on high for 3 hours.
  • Serve with warm maple syrup.
