Toss the sliced bananas and the lemon juice in a small bowl.
Cut up the baguette into bite sized pieces and place half of them into the crock pot insert.
Add half of the bananas onto that layer.
Add the rest of the cut bread and then add another layer of bananas.
Mix together the egg, sugar, cinnamon, milk and extract. Pour over all of the layers in the crock pot.
Drizzle with coconut oil and top with walnuts.
Cook on high for 3 hours.
Serve with warm maple syrup.
