Breakfast Burritos

We love to make this recipe but double or triple it. When you make several all at once, you can freeze them and reheat later. Also, making these ahead gives you an amazing breakfast in the morning in only about 2 minutes of time!

Breakfast Burritos

We like to double or triple this so we can freeze them!

Ingredients

  • 6 medium flour tortillas
  • 2 Tbsp unsalted butter
  • 6 large eggs
  • 1/2 cup sour cream divided (2 Tbsp for eggs & 1 Tbsp per tortilla)
  • 1/4 tsp sea salt
  • 6 oz Sausage ground
  • 4 oz cheese
  • 1 Tbsp butter to sautee

Instructions

Breakfast Burrito Filling:

  • In a medium bowl, whisk together 6 eggs with 2 Tbsp sour cream, and salt and pepper to taste.
  • Heat a large skillet over medium heat – sautee and crumble the sausage. Add additional topping ingredients. Remove from pan.
  • In a pot or skillet over medium heat, melt 1 Tbsp of butter, add egg mixture and scramble until the eggs are 75% cooked. While cooking, remove from the heat, and put back on the heat every minute or so. Add in salt and 2 tbsp of sour cream. Stir constantly.
  • Combine eggs with sausage.

Assembling the burritos

  • Spread 1 Tbsp sour cream in the center of a tortilla and top with 1/6 of the cooked eggs, shredded cheese, and toppings.
  • Tightly roll the burrito and wrap each one in parchment paper. Place into a freezer safe bag and freeze.

Reheating

  • 1 min in microwave.
  • Add tbsp of butter to pan, and sautee burrito on all sides. Serve hot!
