Breakfast Burritos
We like to double or triple this so we can freeze them!
- 6 medium flour tortillas
- 2 Tbsp unsalted butter
- 6 large eggs
- 1/2 cup sour cream divided (2 Tbsp for eggs & 1 Tbsp per tortilla)
- 1/4 tsp sea salt
- 6 oz Sausage ground
- 4 oz cheese
- 1 Tbsp butter to sautee
Breakfast Burrito Filling:
In a medium bowl, whisk together 6 eggs with 2 Tbsp sour cream, and salt and pepper to taste.
Heat a large skillet over medium heat - sautee and crumble the sausage. Add additional topping ingredients. Remove from pan.
In a pot or skillet over medium heat, melt 1 Tbsp of butter, add egg mixture and scramble until the eggs are 75% cooked. While cooking, remove from the heat, and put back on the heat every minute or so. Add in salt and 2 tbsp of sour cream. Stir constantly.
Combine eggs with sausage.
Assembling the burritos
Spread 1 Tbsp sour cream in the center of a tortilla and top with 1/6 of the cooked eggs, shredded cheese, and toppings.
Tightly roll the burrito and wrap each one in parchment paper. Place into a freezer safe bag and freeze.
