Breakfast Burritos

We like to double or triple this so we can freeze them!

Ingredients

  • 6 medium flour tortillas
  • 2 Tbsp unsalted butter
  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/4 tsp sea salt
  • 6 oz Sausage or sub and use bacon
  • 4 oz cheese if desired
  • 1 Tbsp butter to sautee

Instructions

Breakfast Burrito Filling:

  • In a medium bowl, whisk together 6 eggs with cottage cheese, and salt and pepper to taste.
  • Heat a large skillet over medium heat - sautee and crumble the sausage. Add additional topping ingredients. Remove from pan.
  • In a pot or skillet over medium heat, melt 1 Tbsp of butter, add egg mixture and scramble until the eggs are 75% cooked. While cooking, remove from the heat, and put back on the heat every minute or so.
  • Combine eggs with sausage or bacon

Assembling the burritos

  • Top each tortilla with with 1/6 of the cooked eggs, shredded cheese, and toppings.
  • Tightly roll the burrito and wrap each one in parchment paper. Place into a freezer safe bag and freeze.

Reheating

  • 1 min in microwave.
  • Add tbsp of butter to pan, and sautee burrito on all sides. Serve hot!
