We love making this in the crock pot but we have also made it on the stove top and in the instant pot! It’s so versatile and so delicious!
White Chicken Chili in the Slow Cooker
Ingredients
- 1 lb chicken breasts
- 2 cloves garlic
- 1 tsp onion powder
- ½ tsp garlic powder
- ¼ tsp red pepper flakes
- ¼ tsp pepper
- 1 ½ tsp cumin
- 1 tsp oregano
- 1 tsp chili powder
- 1 carton chicken broth or bone broth
- 1 can diced green chilis
- 2 – 15 oz cans great northern beans drained and rinsed
- 4 oz cream cheese
- ¼ cup half & half
Instructions
- Add the chicken, spices and broth to the crock pot.
- Cook on high for 3-4 hours and then shred the chicken. NOTE: It is also completely fine to add all of the ingredients in, except the dairy products and let everything cook all day. We do ours in stages but you absolutely don't have to.
- Drain and rinse the beans and add them in. Let them cook for 30 min until they are warmed through.
- Feel free to pull some of the beans out and puree them with a little bit of liquid to add a thickness to the chili.NOTE: Let the liquid in the blender cup cool before you puree it so it doesn't explode.
- Add in the cream cheese and half & half and let it melt into the chili.
- Serve and top with parsley if desired.
Notes
If you don’t have all of the spices available, that’s totally ok! These are the ones we’ve learned that we love, but feel free to omit anything you don’t have on hand.
