Pumpkin Coffee Cake
Ingredients
Cake
- 1 box cake mix Get my homemade version here (https://feedingthebyrds.com/homemade-dry-cake-mix)
- 1 can pumpkin puree
- ½ tsp ground nutmeg
- 1 ½ tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 egg at room temp
- ½ cup coconut oil melted
- ¼ cup milk
- 1 tbsp maple syrup optional
Crumb Topping
- 1 cup softened butter
- 2 cups flour
- ⅔ cup sugar
- 1 ½ tsp vanilla extract
- 3 tsp cinnamon
- 1 tsp pumpkin pie spice
Instructions
- Preheat oven to 350℉.
- Combine all of the ingredients for the cake and mix well.
- Pour into a 9×13 greased baking dish and bake for 25-30 min.
- While the cake is baking, mix the other ingredients together until you get soft crumbs (like the consistency of sand).
- Remove the cake from the oven and crumble the topping all over the top of the cake.
- Return to the oven and bake for about 15 minutes.
- Optional: Sprinkle with Cinnamon Sugar
