This has been a favorite recipe for a couple of years now. We’ve adjusted it several times, adding a few things and taking away, but this base recipe is absolutely delicious.
Crockpot Sausage and Tortellini
Ingredients
- 1 lb Italian sausage
- 3 cloves minced garlic
- 1 tsp basil
- 1 tsp oregano
- ½ tsp salt
- 15 oz can diced tomatoes
- 15 oz can tomato sauce
- 1 cup bone broth
- 1 cup heavy cream
- 2-4 cups spinach chopped
- 9 oz package of cheese tortellini
Instructions
- In a skillet over medium heat, cook the Italian sausage until browned. Drain any excess fat and transfer the sausage to the crockpot.
- Add the garlic, diced tomatoes, tomato sauce, chicken broth, basil, oregano, and salt. Stir everything together.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours.
- About 30 minutes before serving, stir in the heavy cream. Then add the cheese tortellini and spinach. Cover and cook about another 20-30 minutes until the tortellini is cooked.
