This is a great no-cook dinner option but it’s also an awesome lunch option! We love the caprese flavors and tossing it with some chickpeas makes it a full meal.
Caprese Chickpea Salad
Ingredients
Salad
- 10-15 cherry tomatoes quartered
- 4 oz Mozzarella Pearls
- 1 can garbanzo beans drained and rinsed
- 1-2 tbsp fresh chopped basil
- 1 cup cooked and shredded chicken optional
Dressing
- 4 tbsp oil
- 1 tbsp balsamic vinegar
- ½ tsp cumin
- ½ tsp onion powder
- ½ tsp garlic powder
- ½ tsp salt
Instructions
- Mix all of the salad ingredients together.
- Mix together all of the dressing ingredients and pour over the salad.
- Serve and enjoy!
