Preheat your griddle to medium-high heat.
Whisk together the eggs, milk, cinnamon and vanilla.
Dip each piece of bread into the mixture and cook on the griddle until golden brown, then flipping to cook the other side.
Move to a cutting board and cut each piece of french toast into 4's.
If freezing - freeze in a single layer with parchment in between each layer. Once frozen move to a freezer friendly bag.
