Cut the Italian sausage into coins or if you are using ground sausage, cook it over medium heat until cooked through.
Add the tomatoes, spices and sausage to the crock pot. Stir and cook on low for 3-4 hours or 2 hours on high.
Stir in the cream cheese and let it melt (5 min or so)
Add in the tortellini (we add ours from frozen) and let them cook about 25 minutes.
Serve and top with parsley for color.
