Ground Beef and Potato Casserole (5 Ingredients)

Ingredients

  • 3 lbs diced red potatoes we leave the skin on
  • 1 lb ground beef
  • 1 Homemade Cream of (or a can cream of mushroom) https://feedingthebyrds.com/homemade-cream-of-soup-base
  • 8 oz cheese of choice we used mozzarella but cheddar would be perfect
  • 1 tbsp chopped parsley

Instructions

  • Blanch the potatoes for about 8-10 minutes in boiling water.
  • Preheat oven to 350℉
  • Drain and let them cool while you cook your ground beef.
  • Cook ground beef in a skillet and then drain off the grease.
  • In a bowl, mix together the cream of base, ground beef, potatoes, parsley and half of the cheese.
  • Add to a greased casserole dish and top with the remaining cheese.
  • Cover and bake for 35 minutes with the foil on.
  • Remove the foil and bake for an additional 15 minutes.
