Greek Chicken Orzo Casserole

Ingredients

  • 1 lb orzo Cooked and drained
  • 2 cans diced tomatoes drained
  • 12 oz feta cheese crumbled
  • ¼ cup kalamata olives chopped
  • 1 tbsp lemon juice
  • 1 tsp oregano
  • 2 cups arugula or spinach if you don't like arugula
  • ½ cup chicken broth or bone broth

Chicken and Marinade

  • 1 lb chicken breasts or thighs diced
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp oregano
  • ½ tsp parsley
  • ½ tsp thyme
  • ½ tsp dill
  • 1-2 tsp olive or avocado oil

Instructions

  • Preheat the oven to 350°.
  • Cook and drain the orzo.
  • Spray a 9x13 baking dish.
  • Add in the orzo, cans of diced tomatoes, half of the feta cheese, kalamata olives, lemon juice, oregano, and arugula and mix it all together.
  • Pour broth over the dish.
  • Set the casserole dish to the side and prep the chicken
  • Dice the chicken into approx. 1 inch pieces.
  • Toss the chicken in the spices and oil and place on top of the casserole.
  • Cover and bake for 1 hour.
  • Remove from the oven and top with the rest of the feta. Put back in the oven, uncovered, for about 5 min until it gets a little bit of a brown color to it.
