Preheat oven to 400°.
Place the bread slices directly on the oven rack and bake for approximately 4-5 minutes, or until they become crisp and the edges are slightly browned.
Once done, take the bread out of the oven and set it aside.
Spread the goat cheese on to each one of the bread slices.
Add a dollop of preserves on top, then sprinkle with chopped pistachios and garnish with fresh mint.
